Can I claim all overseas medical expenses and do I require any supporting documents besides medical bills?

My son is on a clinical trial in the US and we travel for his appointments there on a six-weekly basis.

Yes, as long as you meet the required criteria and the health care services you receive must not be available in your area, and you must be required to travel to access them.
