Medical expenses claim period - the app won't save the new dates I put in. it reverts to default dates jan 1 - dec 31

Are you choosing a period that is ending in the tax year in question?

for e.g. for the year 2022, your eligible period would need to end between Jan 1 to Dec 31 2022.
