How do I use Turbotax online to file my 2021 return?

when I want to start a new return it automatically starts a 2024 return

Unfortunately TurboTax Online for 2021 has been discontinued. If you have a Windows pc, you can still use TurboTax Desktop, which you can find here: File past years' taxes
