Non Canadian Income

I left Canada in March 2019 and likely will not be returning for some time.

I have my T4 and have entered that info.

1. I presume I am a non-resident for tax purposes?

2. I started working in New Zealand in September 2019 and I have paid tax on my income in NZ - Do I have to declare this income on my Canadian tax return?

If you are a non-resident of Canada, you may not need to do a Canadian Tax return. You should check with the Canada Revenue Agency (CRA) as to what your residency status for tax purposes is. They can also advise you if you need to include your foreign income. But if there is a tax treaty between Canada & New Zealand, then you won’t be double taxed.
