Which schedule do I complete when I sell all my shares that I purchased through a company?

What is the name of the schedule do I fill out when I sold all

my company shares, eg. Schedule 3 for bank interest etc.

Schedule 3 is used when selling capital property, such as stocks, shares, etc.  Bank interest is reported on Schedule 4.
