Can I complete the RRSP section of the form without putting in my maximum allowable RRSP contributions from last year's Notice of Assessment (not currently accessible)?

You can skip that field for the moment, but your return won't calculate correctly without it. You'll need to enter that amount before you finish up and file.
If you can't find your Notice of Assessment, you can find the amount in your CRA My Account.
