Do I claim the amount of his income or leave it as zero when claiming the transfer of the disability amount, because my son's income is not taxable?

NO his income is not zero and you will include his net income from his line 236. TurboTax will then automatically calculate the amount your dependant can transfer based on the income and other info you entered, deducting this amount from your balance owing (if applicable).
