Do I have to pay sales taxes for my new under 30 000$ online side business since I already have my GST/HST numbers from Uber?

I drive for Uber and made around 22 000$ from Uber and 53$ from selling on Etsy marketplace. I didn't charge the sales tax on Etsy. My overall income is under 30 000$.

If I have to pay sales tax to the government for the 53$, how can I do that given Uber is the one transferring the sales tax to the government. Uber uses the Quick Method.

You will not be required to apply for a New GST number for your Etsy business until you gross over $30K in sales for that product(s).

I finished adding my Uber income in Turbotax self-employed, but when I started adding my Etsy income, its ask me:
"Did you have a GST/HST Account with the CRA?
If so, enter the 15-character Account Number (ex: 123456789 RT 0001)"

Should I put the same number that I used with Uber or just leave it blank since I don't even charge taxes on Etsy?

No you would need to have a different account number for each qualifying business.

Leave the GST number blank on the Etsy Business or you will be liable to pay sales tax on your sales from Etsy without having to have collected the money from your customers. If you feel the Etsy business should have a GST number you will need to apply for a new account for Etsy only.
