The GST I collected for the year, do I put that total in GST collected for the year? Or do i minus all the GST I paid in receipts from business expenses then put that in?

In the Income part of the Self-Employment section, you would enter the total amount of GST that you collected

 

The GST on your expenses would be GST that you paid. You would enter all your expenses with the GST included.
