I'm just wondering if both my fiance and I put down that we have dependents or only the person claiming the children?

Only one person can claim a specific child dependant. Other than that, both of you can separately claim your own dependants.

Ok, so when filing our taxes online together and it asks do you have dependents,  only one of us would say yes? (We have 2 children together)

That is correct if you file as married or common-law equivalent.
