Do I have to put my signatures before sending Federal and Quebec tax returns via post?

Yes, you need to sign your returns if you are sending them by mail.

 

You can find the place to sign on the Federal return at the bottom of the last page of the T1 General. On the Quebec return, the line for the signature is on the bottom of the 2nd page, which is called the “Keying Summary”.
