Is there a way I can get past my birthday without it forcing me to use TurboTax delux?

Every time I enter my birthday, and hit continue, it automatically switches me to the deluxe version which I need to pay for because I'm 25

There's no way to bypass the birthdate. It's mandatory for the CRA and to use TurboTax Online.
