how to edit the self employment work category from business to professional services. Business is greyed out and can't figure out how to edit?

You would have to delete the current profile and make a new one if you want to change the business type.

FYI: A professional for tax purposes would be a Lawyer, Vet, Doctor, Accountant etc...
