I have four vehicles related to my sole proprietor business. The form only has space for two vehicles. How do I enter expenses for the remaining two?

Add another business (or T2125), fill in only the required information (same as on your other form) and then just add a vehicle to that form. You can have up to 4 of those forms on your return.
