Do I have to make an account for each person in my family that I help?

It depends! If you think you might be on the hook for your family's tax prep for a few years, it might be a good idea to prepare all the returns in your account. Then, you'll easily be able to find them all next year when you're ready to transfer them into next years' returns and do it all over again.

The drawback to preparing all the returns in one (your account) is that there's no way to split them or separate them out later. So, if mom wants to sign in to see her return and you shared your account credentials with her, you'd be giving her access to all the returns you prepared in your account. And similarly, if junior decides to do his own return next year, he'd have to start from scratch without the benefit of carrying forward, because there's no way for you to pass him his TurboTax return from this year.
