My husband is not self employed this year but turbo tax keeps saying he is and presenting the screen for self employment. how do we turn that off.

TurboTax could be telling you that he is self-employed because he has income in certain boxes on slips. For example, if he has any amount in box 20 or 48 of a T4A, the CRA says that income would be self-employment income.

Or TurboTax can be showing that he is self-employed if you transferred your information from your 2019 tax return.
