How much in deductions from my Private Pilot License expenses can I claim in a year? It is self-paced (roughly 15k total) and I intend on making it my career (education).

Parts of the Private Pilot Licence, Commercial Pilot Licence, and additional ratings can be claimed if you intend on pursuing a career in aviation and you are a Canadian citizen. The tuition and portions of the flight training are tax-deductible, however, Club membership fees and textbooks are not.

You will need to receive a T2202 from the Pilot school you are training in, in order to claim your pilot license.
