I have filed my state tax return which is due May 15 and I owe; I was wondering if I could change the payment method from my bank account to a credit card?

If you filed the state tax return and elected to pay the state taxes owed by direct debit from your bank account, then you will have to contact the state to cancel the payment.  Payment of taxes owed using a credit card should be available on the state website.
