I am a Foster Parent, should I list the foster children's information in the dependants section? Does this trigger any automatic credits which I may not be entitled to?

Yes, depending on your province some credits are automatically calculated based on their date of birth. I would only enter them as dependants, if you have an eligible credit to a claim.
