Is it considered 1 return or 2 when i file mine and my spouses together? I buy the version with 8 returns and might need to get a different version.

Couples are considered to be 2 returns as 2 returns are generated in the end. If any of your returns have net income of less than $25K, those ones don't count against your 8 and you can file up to 12 of the lower-income returns.
